3 tbsp flour
3 tbsp pan drippings (avoiding fat)
1 cup broth
1/2 cup milk or table cream
1 tbsp blue cheese
1 tbsp red currant or grape jelly
Heat up the drippings. Add the flour and stir briskly until it acquires a bit of colouring.
Add the broth, stir and let it boil over high fire, stirring continuously.
When the sauce is thickened somewhat, add milk or cream. More milk makes the sauce more fluid.
Remove from fire and stir in the blue cheese and the jelly.
Add salt and pepper to taste.
Pour in a heated sauce bowl and serve warm.
