Summer squash (smallish)

Directions

1. Wash, peel, and slice the squash or zucchini.

2. Put sliced squash in a colander and sprinkle generously with salt to remove the excess liquid.  Let stand five minutes.

3. Chop garlic and onion.

4. Melt butter in a skillet and sauté the onion for three minutes or until golden.  Then add the garlic on low heat so as not to burn it. 

5. Add the squash and sauté until it is cooked through and starting to brown.

6. Sprinkle with nutmeg and pepper to taste, and serve.

                                                              

Notes: This is a nice recipe, but not filling, so serve with a hearty main dish. It is a nice change of pace though, because of the slightly unusual combination of spices and ingredients.
