Directions

1.  Preheat oven to medium-high.

2.  Slice tomatoes in half the “long way” and cut out the core.

3.  Clean and mince the garlic. Grate the parmesan cheese.

4.  In a small bowl, combine olive oil, garlic, basil, and oregano. Drizzle the mixture over the tomatoes.

5.  Place tomato halves (skin down) in a greased baking pan, and bake for 20 – 25 minutes (until cooked through).

6.  Remove from the oven and sprinkle with parmesan cheese and salt to taste. Serve hot.

                                      

Notes: This simple dinner is a great vegetarian option. It can also work as a side to a meat dish.

 

Substitutions: Oregano + Basil/Pizza spices. Garlic + Salt/Garlic Salt.

 

Variations: For a meaty option, place a slice of salami on top of each tomato half before it goes in the oven.
