Directions

1.  To prepare the filling, peel and boil potatoes for 5 minutes. Grate the potatoes and set aside.

2.  Clean and chop onion, set aside.

3.  In a large skillet, heat the olive oil. Add the ground beef and brown, breaking it up as it cooks.

4.  Add grated potatoes, onion, chili, cumin, and salt and pepper to taste. Cook until ingredients are soft. Set aside to cool.

5.  To prepare the pastry, mix flour, baking powder, and salt in a bowl.

6.  Cut in the butter until mixture resembles a coarse meal. Add oil, and enough cold water for the dough to come together and form a ball.

7.  Knead until smooth on a floured surface. Let dough rest 10 – 15 minutes.

8.  Preheat oven to medium-high temperature.

9.  Separate pastry into balls about the size of a ping pong ball.

10.   On a lightly floured board, roll pastry balls into circles about 4 inches in diameter (about â…› of an inch thick).

11.   Place a spoonful of filling in the center of each circle. Fold the pastry in half and seal the edges, crimping with a fork or your fingers (if needed, use a bit of water to help seal the dough).

12.   Bake on an un-greased sheet for 15 – 20 minutes or until golden.                                             

 

Notes: The filling may be prepared in advance and placed in the fridge until it is ready to be used. These yummy mini-Mexican Enchiladas are a great dinner item, especially when served with a dollop of sour cream, some hot sauce, and/or a sprinkling of your favorite cheese. Enjoy then as an entree or as an appetizer.

 

Substitutions: Ground beef/Ground meat (tocăniţă). Cumin/Coriander.

 

Variations: Try altering the filling according to your taste – grated cheese is a super addition. You may want to take on a more Italian theme with cheese, pepperoni, and tomato sauce or an Indian taste with curried chicken, peas, and potatoes. Be creative!
