Directions
1. Chop a very small onion and add it to a frying pan with the oil. Over a medium flame, sauté the onion until translucent.
2. Meanwhile, in a small bowl beat the eggs together with the milk or water, grated cheese, salt, and pepper.
3. Lower the heat and add the egg mixture to the sautéed onions. Stir constantly while cooking over low heat. Remove from pan while eggs are still a tad moist, they will complete cooking off the heat.
Notes: Serve hot, sprinkled with extra grated cheese, salsa, hot sauce, and/or ketchup.
Variations: You can also add bacon or ham bits, cook them along with the onion. You try adding some chopped veggies to the onion when sautéing. Mushrooms, tomatoes, spinach, peppers, and zucchini are all good. If you add veggies, cook until they moisture in them evaporates, otherwise your eggs will have a tough texture.
