Directions

1. Wash and peel (optional) potatoes.

2. Place potatoes in a large pot and cover with water.  Bring the water to a boil over a medium-high flame.  Once the water begins to boil, cover and reduce the heat.  Cook until potatoes are tender or slightly undercooked.

3. Meanwhile, cream the butter in a small bowl.  Add olive oil and mix well.  Stir in the remaining ingredients (except the parsley/dill).

4. When the potatoes are done, drain and cut into wedges.

5. Put the butter mixture over the potatoes and mix to coat the potatoes (the heat will soften the butter and make this easy).

6. Place the potatoes on a baking sheet and brush with the remaining butter mixture.

7. Put into a medium-high or high temperature oven and cook until slightly browned.

 

Variations:  Spice up this recipe with some chili powder. These potatoes are tasty served with shredded cheese or sour cream.
