Ingredients

U.S.

Ingredients

European

2 c

Flour

280 g

1 tsp

Salt

1 tsp

½ tsp

Baking soda

½ tsp

3 Tbs

Butter

3 Tbs

⅔ c

Sour milk

160 ml

Directions

1. Pre-heat oven to medium-high. In a bowl combine the flour, salt, and baking soda.

2. Cut in the butter and mix well. Make a well in the center of the flour mixture and pour in the sour milk. Mix well, then turn onto a floured board and knead a few strokes.

3. Roll the dough VERY thin on a lightly floured surface (divide it into 3-4 pieces if you have a small counter to work on). Sprinkle lightly with salt and prick the dough with a fork over the entire surface.

4. Cut the dough into 1 ½ inch squares and bake on a greased baking sheet for 10-12 minutes or until golden.

5. Remove and let them cool completely before storing.

Substitutions: Sour milk/Plain yogurt.

Variations: You can sprinkle these crackers with a wide range of toppings for flavored crackers. Try grated cheese, pepper, chili, onion flakes, herbs, poppy seeds, or sesame seeds.
