Directions

1. In a small bowl, beat together the sugar, eggs and vanilla.  Set aside.

2. In a larger bowl, sift together the flour, baking powder, salt and baking soda.

3. Cut butter into flour mixture until well blended.

4. Make a well in the center of the flour mixture.  Add the sugar mixture to the well and stir until well blended.

5. Refrigerate dough for 1 hour.

6. Once the dough has chilled completely, roll it out on a lightly floured surface to a ¼ inch thickness.

7. Cut dough into desired shapes with a cookie cutter or glass.

8. Bake on a cookie sheet in a medium-high temperature oven for 8-12 minutes or until slightly browned.

9. Let cool 2 minute on cookie sheet before removing to a cooling rack (a clean piece of paper bag or newspaper works also.

 

Notes:  If decorating with sprinkles, brush the tops of the cookies very lightly with a beaten egg white, then sprinkle with coarse sugar, sprinkles, chopped nuts or what ever you’d like and bake as directed. You can also use the Flour Icing recipe*, or Simple Sugar Glaze**.
