Directions

1. Preheat oven to medium-high heat.

2. In a medium bowl, mix flour, salt, baking powder, cinnamon and sugar.

3. In a large bowl, combine oil, vanilla and eggs – beat until well blended.

4. Slowly add the dry ingredients to the wet ingredients. Mix until you have smooth sticky dough.

5. Spoon out balls of dough and drop them onto a greased cookie sheet or onto a cookie sheet covered in tin foil.

6. Place in the oven and cook for 10 minutes, or until cookies are firm and browned on the bottom.

                                                      

Notes: If cookie batter is not stiff, add more flour. These cookies are good with a bit of frosting.

 

Variations: You can try putting ¼ cup of cocoa in them for a chocolate flavored cookie.
