Directions

1. Heat oil in a frying pan over a medium flame.

2. Once the oil is hot, break the eggs into the pan - being careful not to break the yolk.

3. Sprinkle with salt and pepper.

4. Cover and reduce the heat if necessary. Do not flip the egg.

5. Once the whites are completely cooked, carefully remove the egg from the pan with a slotted spatula and drain off any excess oil. (Dab the egg with a paper napkin if you would like to remove more oil.)

 

Notes: Depending on what type of pan you use (non-stick or one from a bunica the amount of oil can vary. The important thing is make sure the eggs don’t stick. To help the top of the egg cook, you can also splash some of the hot oil over the top surface of your egg.

 

Variations: Add different spices or grated cheese once eggs are done to give them more flavor.
