Directions
1. Cook rice*. Set aside.
2. While waiting for the rice to cook, boil soy cubes for 20 minutes or until soft. Drain and force some of the water out.
3. Heat the oil in a frying pan. Toss in the soya cubes and fry for 2 minutes.
4. Add the jar of Sweet and Sour Sauce. Stir-fry until the soya cubes have absorbed the flavor (2-4 min). Serve over rice.
Notes: This is a quick vegetarian meal that is not expensive but is filling. It is not the best thing to cook in order to impress a date, but it will do in a pinch (as long as they don’t see the jar of Uncle Ben’s).
Variations: You can easily improve the aesthetics and nutritional value of this meal with some steamed veggies (fresh or frozen). If you have access to soy sauce, it’s a nice addition, as are any other Asian seasonings. It is a very adaptable dish, open to interpretation. The best idea is to use it as a base, and build your own recipe out of it.
Substitutions: Soya/Tofu or vegetables.
