Directions
1. Boil rice*. Drain and run cold water over while in a strainer so it is not sticky. Let cool.
2. While preparing rice, dice the tomatoes and cucumbers and place in a large mixing bowl.
3. Drain the oil from the tuna and add tuna to vegetable bowl.
4. Salt and pepper to taste and add a bit of garlic powder. Mix well so that all the pieces taste seasoned.
5. Empty yogurt into a small bowl. Add curry powder, salt, black pepper, a dash of chili powder and 2 tsp honey. Mix well so that all of the curry dissolves. Taste, and adjust seasoning.
6. Place a healthy bed of rice at the bottom of the plate or bowl. Add vegetable and tuna salad and spoon curry sauce on top.
7. Sprinkle raisins and sunflower seeds on top.
Notes: This is a great summer dish as cucumbers and tomatoes can both be found pretty cheap. The yogurt curry sauce is supposed to be sweet and spicy. To make mixing the curry into the yogurt a bit easier, add a tablespoon of oil to the mix. If it tastes bitter, add more salt. Make sure you season the vegetables and the tuna together to taste.
Variations: If you prefer a spicier sauce, add more black and chili pepper. A sweeter sauce can be accomplished by adding more honey.
Substitutions: Tuna in oil/Tuna in water. Raisins/Any dried fruit. Yogurt/Sour cream.
