Directions
1. Chop the onion and garlic and set aside. Drain and rinse the mushrooms.
2. In a saucepan, heat the oil and sauté the onion, until soft. Add the garlic and mushrooms.
3. Add herbs, canned tomatoes and juice (1-2 cans depending on the size), salt and pepper.
4. Simmer for 20 minutes, adjust the seasonings and serve.
Notes: It’s chunky, it’s good, and it’s really easy! Serve on your favorite pasta. If you plan to use this Tomato Sauce on pizza, you may want to chop the veggies finely.
Variations: A splash of wine (red or white) is always great in pasta sauce. Try adding a dash of cinnamon and sugar to make a sweeter Sauce. For a thicker Sauce, you may want to add some tomato paste – or cook this recipe longer. For a meat version, try adding sliced salami (don’t add salt if you do this), sausage or ground meat when you are cooking the onions (after the meat is cooked, drain extra fat before adding other ingredients).
