Directions

1. Finely chop parsley and green onions (both white and green parts). Set aside.                                          

2. Crush salted crackers to make â…” c of crumbs. Set aside.                                                                 

3. Scrub lemon and grate zest to make 1 tsp.            

4. In a small bowl or cup, beat egg.                                                             

5. In a medium bowl, mash tuna, onion, parsley, cracker crumbs, lemon zest, pepper, lemon juice and beaten egg. Mix well.

6. Heat a skillet over a low flame and add oil for frying.

7. Form the mixture into small flat patties. Cook the patties until they are firm and lightly browned on both sides. Keep the heat low if necessary to ensure the egg cooks through.                                             

7. Serve the patties hot or cold.

                                                              

Notes: This recipe is quick, simple and the leftovers are nice for lunch.

 

Variations: You can serve these tasty little burgers plain, topped with melted cheese, or with the usual burger fixings. For a spicy variation add 1 tsp curry powder and ½ tsp hot chili powder and top with yogurt. Or experiment with whatever fresh herbs are available at your site.                              

Substitutions: Green onions/1 small onion (white or red). Fresh parsley/2 tsp dry parsley
