Directions
1. Clean and chop cucumber. Clean and crush or finely mince garlic.
2. In a bowl, combine all ingredients, adding crushed garlic as the final ingredient.
3. Adjust the seasonings to taste.
4. Serve chilled.
Notes: Tzatziki is a common side dish or sauce in Middle Eastern cooking. This recipe is great as a shaorma dip or for dipping fries. It’s also a nice accompaniment to Lentil Walnut Burgers*.
Variations: Fresh mint and/or shredded carrots are a nice addition to this recipe.
