Directions

1. Mash bananas in a bowl and set aside. Start your oven preheating on medium.         

2. In a large mixing bowl, cream butter and sugar until well blended (best if butter is warm).       

3. Beat the egg in a small bowl. Add the egg and bananas to the sugar mixture and blend well. 

4. In a separate bowl, combine flour, baking soda, salt and nutmeg.                  

5. Add the dry ingredients to the wet ingredients and mix until most of the lumps are gone.

6. Grease a loaf pan or other small baking dish. Add batter and bake in a medium or medium-low oven for about 60-90 minutes or until loaf is cooked through. To test the loaf, poke a knife through the center, it should come out clean. The loaf will also start to pull away from the sides of the pan when it is done. 

                                                              

Notes: This recipe is best made with VERY ripe bananas, if the bananas are not so ripe, you may need to increase the sugar a little bit. Depending on your oven, you may need to lower the oven temperature when you put the bread in, to make sure the center cooks without burning the bottom.
