Directions

1. Wash, sort, and pre-soak beans*.

2. Put pre-soaked beans in a medium pot with fresh water.  Bring to a boil over a medium-high flame and cook until the beans are tender.  Drain, rinse and set aside.

3. Chop the onion.

4. In a small frying pan, heat oil over a medium flame.  Add the onion and sauté until cooked.  Set aside.

5. Place the water in a pot.  Add a dash of salt and bring the water to a boil.  Add the corn meal slowly, stirring constantly to get rid of lumps.  Cook until thickened slightly.

6. Stir in the sautéed onion and drained beans.  Add salt, pepper and vinegar to taste.

 

Notes: Serve this dish hot with a sprinkle of fresh onion and vinegar.  It is also tasty with a dollop of sour cream and/or a sprinkle of good, salty brânză!

 

Substitutions: Dry beans/Canned beans.
