1 qt. beer
1/2 piece of cinnamon bark
1 tbs. butter
4 egg yolks
1/2 pint of sweet cream
Put into a pot one quart of beer, 1/2 piece of cinnamon bark,
4 cloves and sugar to your taste. Cover tightly and boil slowly.
Beat in a serving soup bowl one tablespoonful of sweet fresh
butter to a foam with a fork. Combine with 4 egg yolks and
beat together very well.
Add 1/2 pint of strictly fresh heavy sweet cream and beat with an egg beater to a foam. Now remove the cinnamon bark and the cloves from the beer.
Holding the pot in one hand, pour the beer a little at a time into the foamy mixture, while at the same time stirring constantly with your other hand without interruption until you have poured in all the beer.
Serve with toasted slices of roll.
