Directions
1. Core, rinse, trim, and chop cabbage. Set aside.
2. Chop the onion. In a large pan, melt 2 Tbs of the butter over a medium flame and sauté the onion until tender.
3. Add the cabbage and the water to the pan. Cook until cabbage is almost tender but still slightly crunchy.
4. In a separate pan, melt the rest of the butter and stir in the flour.
5. Slowly mix the tomato juice into the butter and flour mixture. Stir and cook until the sauce begins to thicken.
6. Mix in the sour cream. Add salt and pepper to taste.
7. Add the sauce to the pan with the cabbage.
8. Chop up the tomatoes and parsley and add them to the mixture. Heat through.
Variations: For a heartier meal, add cooked beans at the same time as the tomatoes and parsley.
