Directions
1. Clean and chop onion and garlic. Set aside separately. Beat eggs in a small bowl or cup and set aside. Thinly slice pork if you are using it.
2. Heat oil in a large frying pan or wok.
3. Add the onion and cook until transparent. Add meat (if using) and garlic.
4. Stir fry until meat is tender and cooked through (reduce heat if garlic is burning).
5. Add the cooked rice*, salt, pepper, soy sauce, and fry for another 5 minutes.
6. Add the vegetables and stir well. Taste and adjust seasonings if needed.
7. Make a good sized hole in the middle of the rice and pour in the beaten eggs. Scramble eggs – then blend in the rice mixture. Garnish with chopped cashews.
Notes: Fried rice is best prepared with cold, day-old rice. You can use what ever vegetables you’d like, good options are chopped lettuce, pepper, carrots, green onions, peas, and broccoli. If you add enough goodies to this – it can easily serve as an entrée.
Variations: If you don’t have any day-old rice on hand, you can start frying the onions, pepper, salt, and garlic in oil. Then add 2 c. water and 1 c. uncooked rice. Cover and wait until rice is cooked. In another pan, fry vegetables and meat. Add the vegetables and meat to the cooked rice. Scramble the eggs into the concoction, add and adjust spices, and serve.
