Directions
1. Drain horseradish in a strainer. Most jars are about one cup. Rinse quickly with boiling water. If you like it HOT do not rinse.
2. In a bowl, combine sugar, lemon juice and cream. Mix until smooth.
3. Add horseradish and mix thoroughly.
4. Add salt and pepper to taste.
Notes: This is a good condiment for meats and sandwiches.
Variations: Add 3 to 4 hard-boiled, cooled, mashed egg yolks if desired.
Substitutions: Store-bought horseradish/Fresh grated horseradish (this will usually be a lot hotter).
