Directions

1. Prepare one recipe of Mămăligă* according to the directions in this website. Allow it to set and cool just until warm. Pre-heat oven to medium-high.

2. Oil a pie pan or large cast iron skillet. Spread the Mămăligă evenly over the bottom and sides of the pan with wet hands. Brush the surface of the Mămăligă with oil and bake, uncovered, in a medium-high temperature oven for about 45 minutes. Check on it to make sure it does not overcook.

3. In the meantime, prepare the filling. Grate the caşcaval and slice the tomatoes, setting each aside separately. Clean and slice the onion, bell pepper, zucchini, and garlic cloves.

4. In a large skillet, heat 1 Tbs oil over a medium flame. Sauté the onion for 3 minutes before adding the bell pepper, mushrooms, and zucchini. Continue sautéing until vegetables are tender.

5. Add the garlic, oregano, basil and pepper and cook another 1-2 minutes. Remove from the flame.

6. Once the Mămăligă pie shell has cooked, remove it from the oven. Let it sit for at least 5 minutes.

7. Spread half the caşcaval over the crust, followed by the tomato slices. Pour the vegetable mixture over the top and sprinkle with remaining caşcaval.

8. Return the pie to the oven and bake until heated through and the caşcaval has melted or browned slightly.
