Directions
1. Prepare pasta*.
2. While pasta cooks, chop onion and garlic very fine. Chop tomato and set veggies aside.
3. Shred cheese, and set aside. Drain tuna, and set aside.
4. When pasta is done, drain and immediately add cheese – stir gently to distribute cheese as it melts (it will try to all lump together).
5. Add veggies, tuna, salt, pepper and herbs. Mix well.
6. If needed, gently heat the pasta over a very low flame to melt cheese a bit more and heat all ingredients (stir constantly but gently to keep it from burning). Serve immediately.
Notes: This pasta is quick, simple, and is great if eaten immediately. It does not re-heat well or make very good leftovers.
Variations: You can change the flavor of this dish by varying herbs and using different veggies. Broccoli is very good, as are spinach and mushrooms. You can also use fresh herbs rather than dried if they are available (this is much better).
