Directions
1. Clean the potatoes and boil them until they are tender.
2. After potatoes have cooled, cut in half and scoop out some of the insides, leaving a ¼ thick shell. Place shells in a baking pan and set aside.
3. In a frying pan, put oil and onion and sauté until the onion becomes translucent.
4. Add ground beef and stir for 5 minutes.
5. Add tomato paste, potato insides, ketchup and dill. Stir for 2-3 minutes.
6. Add sour cream and stir for 1 minute. Turn off heat. Add salt and pepper to taste.
7. Spoon meat mixture into the empty halves of the potatoes. Top each filled potato half with cheese.
8. Place in the oven for 20 minutes or until the cheese is bubbling and browning.
Variations: Make this a vegetarian dish by subtracting the ground beef.
Substitutions: Sour Cream/Yogurt. Ground Beef/Any ground meat.
