Directions

1. Peel and slice the beets into matchsticks or smaller rings.

2. Boil or steam beets until tender.

3. Drain beets and place into a bowl. Grate fresh horseradish over the top of the beets.

4. Lightly drizzle with oil and vinegar to taste. Serve warm or cold.

 

Notes: This simple salad is quick to make and will keep in the refrigerator for a few days. Sprinkle with a little salt and pepper for more flavor.

                              

Substitutions: Horseradish root/Horseradish in a jar.
