Directions
1. Cook rice*. Preheat oven to medium-low.
2. In a large bowl, beat eggs. Add milk, honey, vanilla, cinnamon, nutmeg, and salt. Beat very well with a whisk or fork (be sure no honey remains at the bottom of the bowl).
3. Add rice and raisins to the liquid mixture. Stir until combined.
4. Grease a baking dish, and gently pour in the rice mixture.
5. If using nuts, chop and sprinkle on top. Dust top with cinnamon.
6. Bake in a medium-low oven until set (about 50 min).
Notes: Serve hot or cold with cream, fruit or Fruit Sauce*.
Variations: This dish is usually served as a dessert. It also makes a delicious breakfast (if you’d like you can increase the eggs to 4, and reduce the honey for a healthier dish). You can also add more fruit, jam or other flavorings. Toasted coconut is a very nice addition.
