Directions
1. Wash and dice tomatoes, bell pepper, and onion. Finely mince the garlic and hot pepper(s).
2. Mix all the vegetables in a large bowl.
3. Toss veggies with chili powder, curry (if using), ground coriander, and salt to taste. If needed, add a splash of vinegar. Taste again and adjust spices as needed.
Notes: Be aware, this Salsa will heat up over time. So, if you plan on storing it for a few days in the fridge, be careful if your peppers are very hot. Also, remember that hot peppers in Romania are unpredictable (one can start mild at the tip, and by the time you reach the stem be hellishly hot). Taste as you go.
Variations: Try roasting the peppers and garlic in the oven before tossing in the Salsa. This creates are truly unique taste. If you can find fresh cilantro at the market – this will be a stellar addition. Fresh lime juice is also a nice flavor to add, the same is true for cumin (if you had it shipped from home). Beware, Romanians may tell you that cumin and caraway are the same thing – one is sweet one is not – you may be sad if you put caraway in your Salsa.
