Strawberries (sliced)

Directions

1. Prepare 1 batch Scones.             

2. While Scones are baking, wash and slice strawberries. Set aside.

3. Add sugar and vanilla (if using) to the cream and mix well until the sugar has dissolved.

4. Serve Scones warm, topped with strawberries and drizzled with sweet cream.

               

Notes: This recipe is delicious in summer, with fresh juicy strawberries. It’s not really worth making out of season, but if you must and the berries lack flavor, sprinkle them with 2 Tbs of sugar after they are sliced and let them sit for 30 min. The sugar will draw out the juice and improve the flavor.

 

Variations: You probably know that this recipe is traditionally made with whipped cream. If you can find whipping cream or the powdered alternative – use those (though you may find the powdered stuff disappointing). If using whipped cream, gently add sugar and vanilla after whipping. You can also use yogurt (with sugar and vanilla) for a healthy dessert or breakfast option.
