Corn flour (very fine)

Directions

1. In a medium bowl, combine corn flour, flour and salt. Mix well with a fork.

2. Slowly add water, cutting it in with the fork. Add water until dry crumbles form – when you can press the crumbles together to form a ball, you’ve added enough water. The dough should not be wet or sticky, but it needs enough moisture to hold it together.

3. Form dough into 4 balls.

4. To roll out tortillas, place 1 ball in a clean plastic bag or between 2 sheets of clean plastic (the plastic or bag must be larger than the tortilla you want to make). Carefully press the ball into a patty with your hand, then carefully roll it out (using a rolling pin). The tortilla should be quite thin – and about the size of a dinner plate.

5. Heat a skillet over medium heat and add a bit of oil. Gently peel the plastic off one side of your tortilla, then the other – careful not to rip the tortilla.

6. Place the tortilla flat in the pan, cook until it just starts to brown on the bottom, then flip. Careful not to let it dry out to much. Repeat until all tortillas are cooked.
