Cut 3 pounds of veal into small cubes. Cut 5 or 6 cloves of garlic into very small pieces and sear for a few minutes in 4 lahlespoonfuls of butter or lard. Add the meat and fry, with con-stant stirring until brown. Add chopped parsley and a little (hives. Saute for a few minutes. Add salt and pepper to taste and one cup of broth or water. Cook slowly until meat is tender, adding from time to time more broth. When done, add one glass of wine and 3 tablespoonfuls of sour cream and cook for 5 minutes longer. Serve with mamaliga or puree of potatoes with sour salad.
